Olivier Elzer comes from a fine dining background steeped in Michelin-starred kitchens, where precision and tradition are paramount. Yet his culinary philosophy is refreshingly, and often times surprisingly, grounded in value and accessibility.

As a chef, entrepreneur, and creative director with a 30-year track record and experience from 27 Michelin stars, he remains committed to offering guests a rounded, incredible yet approachable dining experience, marrying the sophistication of deeply classic French techniques with the innovation of modern adaptations, marrying heritage,  local flavours and produce.

With an extensive background across all facets of the F&B business, his approach transcends food, drawing inspiration from culture, art, fashion, sport, and wellness. This unique mix of creativity, innovation, and expertise – underpinned by values of craft, mastery, and precision – sets new standards and pushes boundaries in the industry.

At the heart of his leadership is a collaborative spirit. Just as a creative director in a fashion house shapes visions and concepts, Olivier formulates ideas and sees them through to execution, cultivating talent and inspiration within his team.

He orchestrates, inspires, and activates projects that push boundaries and engage all the senses, creating immersive, story-led F&B experiences that resonate deeply on an international scale.
